EGG COOKING METHOD: BAKED WHIPPED EGG WHITE

INGREDIENTS

  • Egg white 60g

  • Sugar 30g

  • Vinegar 1/2 teaspoon

  • Corn starch 1/4 teaspoon

  • Orange (or any flavour) curd (+- 1/2 tsp for each heart)

 

THE MAKING:

PAVLOVA

  • Preheat oven at 160 degree Celsius.

  • Beat egg white till soft peaks/bubbles form;

  • Gradually add in sugar (1 teaspoon at a time), beat well after each addition. Beat until stiff peaks form, make sure the sugar dissolves completely;

  • Sprinkle corn starch and vinegar into the meringue and fold with spatula;

  • Use pastry bag to pipe the meringues onto baking sheet. Stack up 2 or 3 layers of heart shape meringues.

  • Bake the meringues for 30min.

 

  • Remove the heart shape pavlova from oven and let them cool down. Gently separate the pavlova from baking sheet. Scoop 1/2 teaspoon of orange curd in the hole of those hearts. Garnish with candy sprinkles.
