CHICKEN SALAD
INGREDIENTS
2 skinless chicken breasts
1 large egg, hard Boiled
1 head of romaine lettuce
shaved parmesan
Dressing
1/3 to 1/2 cup low fat mayonnaise
1 teaspoon lemon juice
2 tablespoon olive oil
salt and pepper to taste
DIRECTIONS:
1. Place chicken into boil water, skimming fat as needed.
2. Cook about 15 minutes, then drain and shred.
3. In a bowl, combine the chicken, lettuce and egg; Toss to blend.
4. Add the dressing and parmesan.
